sausage, spinach & roasted red pepper alfredo
We've made this before... several times actually but it was so yummy the other night I had to take a picture to share. Click below for the original recipe.

sausage, spinach & roasted red pepper alfredo
I got this recipe from my friend Joie, you can view her blog "Cook Now, Eat Later". It is so easy and cheap to make it but the taste is incredible! Perfect for a weeknight meal when you are in a hurry. My 2 year old also loved this, woohoo!
Ingredients
- 1 jar roasted red pepper alfredo (Classico)
- 1 box frozen spinach
- 4 mild Italian sausages *
- 1 box fettucine
Directions::
- Put the sausage in a pan and cook half way. Take them out and cut into bite sized rounds. Put them back into the pan until cooked through.
- Microwave spinach to defrost ** Squeeze mositure out of spinach using cheesecloth (or dishtowel that you dont mind staining).
- Add the spinach to the sauce and break it up. Add the sauce and cook until heated through.
- Serve over boiled fettucine
* Next time we will use spicy sausage, we like the extra kick
** I defrosted the spinach by leaving it in the sink for most of the day while the sausage defrosted.

Asian Beef Stir-Fry
Yum, Yum, Yum! The only word that describes this super quick, easy & kid friendly meal. Oh, and did I mention it is also healthy?
Ingredients:
- 2 cups instant brown rice, uncooked (I used the brown rice boil-a-bag)
- 1 lb. boneless beef sirloin steak, cut into thin strips
- 2 tsp. minced garlic
- 1 pkg. (16 oz.) frozen stir-fry vegetables, thawed, drained
- 1/4 cup Asian Sesame with Ginger Dressing
- 1/4 cup lite soy sauce
- Cook rice as instructed on box (boil or microwave)
- Heat large nonstick skillet on medium-high and add garlic & meat.
- Stir-fry for about 2 minutes.
- Add vegetables (I never bothered thawing mine), dressing, and soy sauce, stir-fry until veggies are tender. About 3 minutes.
- Serve over brown rice.
That's it! So simple and REALLY good!

No-cook Fresh Tomato Sauce with Pasta
This recipe is to die for!! It's perfect for the summer if you want something light! And it only took 10 minutes!! I seriously could make this every single day for lunch, it was that delicious!
2 lb. plum tomatoes (I used regular tomatoes, 2 medium)
1/4 c chopped fresh basil leaves
2 tbsp. chopped red onion (I used a whole onion, not a great idea unless you LOVE onion!)
1/2 c. Italian dressing
1/4 c. Grated Parmesan or Romano cheese.
1 lb. pasta, cooked & drained.


2 lb. plum tomatoes (I used regular tomatoes, 2 medium)
1/4 c chopped fresh basil leaves
2 tbsp. chopped red onion (I used a whole onion, not a great idea unless you LOVE onion!)
1/2 c. Italian dressing
1/4 c. Grated Parmesan or Romano cheese.
1 lb. pasta, cooked & drained.
- Boil pasta (I used linguine)
- Cut up tomatoes, basil & onions.
- Add tomatoes, basil & onions to large bowl.
- Stir in dressing and cheese.
- Add pasta, toss lightly.

30 Minute Chili
I had taken some hamburger out last night for my husband and I. I thought all day long about what to make with it since our pantry items were few and far between. I had contemplated meatballs but then realized I had no breadcrumbs. While browsing the pantry I came across Chili seasoning and decided, hey! I can make some quick chili! So here is my quick & easy 30 minute chili, which by the way tasted FABULOUS! Oh and I totally cheated by using store bought ingredients but what do you expect for 30 minutes?!
30 Minute Chili
1 lb ground beef (or turkey)
1 packet of Chili Seasoning
1 16oz jar of salsa
1 16oz can of pinto beans
1.5 C water
Shredded cheese & sour cream to top if desired.

30 Minute Chili

- Brown beef in a pan & dry
- Add water, seasoning, salsa & pinto beans
- Simmer for 8-10 minutes
- Spoon into bowls and top with cheese & sour cream if desired
